Zucchini Muffins


This fall, my mother in law started making a new relish using zucchini as the base. It's soooo good. So we started a batch for me yesterday. We had loads of zucchini and I shredded a bunch to freeze for baking.
I thought I'd use some while it was fresh and made some muffins. The recipe is actually for loaves, but things tend to taste better when they're in a muffin paper ... dontcha think?

Combine (blending after each addition) ...
3 eggs
1 cup salad oil
2 cups sugar
2 tsp vanilla
2 cups grated & peeled zucchini
1 cup crushed pineapple (drain off juice)
1 cup raisins
1 cup walnuts (optional)

In another bowl, combine ...
2 tsp baking soda
2 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
3 cups flour

Mix wet & dry ingredients until well blended.

Bake in 325 degree oven for 1 1/2 hour.
(20-25 minutes for muffins)

lovin the blog header and ahhh someone has an over abundance of zucchini huh?
We were like that one year we had zucchini EVERYTHING I was so sick of it by the end of october. rofl but we do really like it so it worked out.
Squash was the other thing. ya we got pretty inventive rofl
